Gooey Peanut Butter Cookie Brownies.

Do you remember when I said I was on a diet? Do you remember when I said I was going to stick to it ever so strictly because I’m so close to my goal and I just want to be done with it already? Do you remember when Peanut Butter and Chocolate seduced me and in a moment of weakness I created this unbelievable concoction of deliciousness? I do. I’m pretty sure my thighs remember it too. In fact, they just called me to let me know that they’re going to hang onto that moment for at least 3 weeks or until I fight them to the death with squats and lunges.

This recipe is so simple. It’s really just two very basic recipes hugging a gooey layer of marshmallow fluff. And the way the top cooks up so crisply is extremely rewarding to the tastebuds. Are you ready for it? Sure you can handle it?

Gooey Peanut Butter Cookie Browies

Peanut Butter Cookie Layer:

  • 1/2 Cup (1 Stick) Unsalted Butter, Softened
  • 1 Cup Brown Sugar
  • 1 Cup White Sugar
  • 1 Cup Creamy Peanut Butter
  • 2 Large Eggs
  • 1 1/2 Cups All-purpose Flour
  • 1/2 tsp. Baking Soda
Preheat oven to 350°
In a medium bowl, cream together butter and sugar. Mix in Peanut Butter and Eggs. In a separate bowl, mix flour and baking soda and then mix into the peanut butter mixture. Spread dough onto the bottom of a 9×13 ungreased glass baking dish.

Spread the contents of 2 jars of Marshmallow Fluff on top of the Peanut Butter Cookie layer. What I do is plop the fluff on top in spots and then I place the dish in the oven for 1 minute to soften the fluff, then spread it out evenly with a spatula.

Brownie Layer:

  • 1/3 Cup Unsweetened Cocoa Powder
  • 1/2 Cup (1 stick) Unsalted Butter, Melted
  • 1 Cup Sugar
  • 2 Large Eggs
  • 1 tsp Vanilla Extract
  • 1/2 Cup All-purpose Flour
  • 1/4 tsp. Baking Powder
  • 1/4 tsp. Sea Salt
  • 2 Cups Rice Krispies
In a medium bowl, blend together butter, sugar, cocoa powder, eggs, and vanilla. In a separate bowl, mix flour, baking powder, and salt. Slowly pour into the chocolate mixture and blend well. Gently fold in Rice Krispies.

Spread brownie mixture on top of the marshmallow layer.

Place in the pre-heated oven for 45 minutes. Remove from oven and allow to cool completely. Chill in the refrigerator for easier cutting 😉

Try not to eat too many all by yourself!
