Pretzel Roll Bread Pudding

Happy New Year! Wow, 2011 was a quick year.

Is it just me? I want to do a re-cap, but seriously, this year whooshed by so quickly I’m not even sure I remember what happened! A few noteworthy memories…

  5. Santa got me a Copper Kitchen Aid Stand Mixer for Christmas. Oh rapture!
I’ve never had a stand mixer, nor did my mother, so  I’ve become very accustomed to the hand mixer. I was almost too afraid to use this beauty, but I finally did for the first time today. It’s so lovely! I can’t wait to make homemade bread and pizza dough! And it matches my tiles perfectly 🙂
So now what for 2012?  I’m not really one to make resolutions, as they all end up being cliche and I forget about them by the 5th (oops). One I know I can stick to, though, is to post more recipes that are pescetarian, vegetarian, and healthy. But for now, here’s another dessert to tide you over 😉
I’ve been really craving bread pudding lately, and I came across these awesome rolls at Trader Joe’s today. They sounded good, but I actually bought them because I liked the way they looked. Ha. They taste really good, too, so it all worked out.

Pretzel Roll Bread Pudding

Ingredients:

  • 4 Trader Joe’s Pretzel Rolls
  • 1 Cup Heavy Cream
  • 1/2 Cup Unsalted Butter, Melted
  • 1/2 Cup White Sugar
  • 4 Whole Eggs
  • 1 tsp Ground Cinnamon
  • 2 tsp Vanilla Extract
  • 1/2 Cup Dried Cranberries
  • 1/2 Cup Raw, Unsalted Walnut Pieces
  • A pinch of Sea Salt
  • Half & Half and Caramel Sauce for serving

Preheat oven to 350º. Put Pretzel Rolls into an 8×8 glass baking dish.

I poked a bunch of holes in these with a skewer. Then I pushed a big hole into the center of each with my finger.

Mix together cream, sugar, butter, cinnamon, vanilla, and eggs until well blended. Pour over the top of the rolls and sprinkle with cranberries and walnuts.

Place in the oven for 35 minutes in the center rack. The walnuts and cranberries will toast nicely.

Sprinkle with sea salt. Serve warm or chill in the fridge. These rolls themselves will still be fairly dry, but that makes for a nice texture when you serve them topped with a splash of Half & Half and some caramel sauce!

Bread pudding made using pretzel rolls. With cranberries and walnuts, this is a wonderful holiday dessert.

Ingredients
  • 4 Trader Joe’s Pretzel Rolls

  4. Mix together cream, sugar, butter, cinnamon, vanilla, and eggs until well blended.
  5. Pour over the top of the rolls and sprinkle with cranberries and walnuts.
  6. Place in the oven for 35 minutes in the center rack. The walnuts and cranberries will toast nicely.
