Creamy Dijon Salmon

People are funny about resolutions. There is a huge rise in the amount of people at the gym for the first 20 days or so of the year. Most people pledge to eat healthy and exercise more for the new year and finally get into shape. Some are just trying to lose the 5-10 lbs they packed on during the past couple of months of comfort food, pumpkin spice lattes, and the endless array of holiday treats.  And hey, no way am I judging, as that was my routine every new year since I was about 14.

This year was very different. I lost all of the weight I wanted to lose over the summer and to help keep it off over the holidays I didn’t even order a single specialty latte. I found out how wonderful coffee is with a little bit of half and half and a generous sprinkling of cinnamon. I skipped the foods made with cheeses and heavy creams and butter. I did not have any holiday treats except to taste the recipes that I made myself, and I was careful to keep 2 weeks between dessert recipes and only taste 1 or 2 samples (sometimes I wasn’t so strict. I think I ate about 9 of those Peanut Butter Pumpkin Butterfinger cookies… and a few spoons full of the maple glaze from the Pumpkin and Cream Cheese Bundt Cake… oh… and a lot of Pumpkin Fudge. I guess I really like pumpkin).

Hmm… as I’m writing this I’m becoming less convinced that I always made the wisest choices. On Christmas Eve I had Fish Tikka Masala at our local Indian Restaurant. All of it. With Naan bread. Christmas morning I had Aebleskivers with powdered sugar and >gasp< Log Cabin syrup. Then I ate healthy the rest of the day until the neighbor brought over home made English Toffee. Oh geez. I confess that on New Year’s Eve I ate an entire small pizza from Dominos with mushrooms, green peppers, pineapple, and Cholula hot sauce. The whole thing. It was amazing. But I only did that once! All of the in-between was healthy! I swear!

So the point is, while I was lucky to not put weight on over the holidays as I tried to keep my slip-ups to a minimum, I need to plop back into healthy eating again myself. So who wants a super healthy salmon recipe?

This might be the most wonderful recipe in the history of the universe. OK, perhaps I exaggerate… but really, how can you beat a gourmet fish dish consisting of three simple ingredients? I questioned posting this because, honestly, I just felt like it wasn’t complicated enough. But then why would I keep this gem of a recipe a secret?

I wouldn’t! Here’s to health, happiness, and a svelt body in 2012!

Creamy Dijon Salmon

 Ingredients:

  •  6 oz Salmon
  • 1 Tbsp. Greek Yoghurt (I use Fage 0%)
  • 2 Tbsp. Whole Grain Dijon Mustard

For every 6 ounces of salmon, combine 1 Tbsp. Greek Yoghurt with 2 Tbsp. Whole Grain Dijon Mustard. Spread mustard mixture evenly on top of salmon and cook over medium heat in a skillet brushed with olive oil. Start skin side down and cook for about 3 minutes on each side or until cooked through.

Healthy, zesty, easy. I love it 🙂

Ingredients
  • 6 oz Salmon
