Tomato Avocado & Vegemite Grilled Cheese Sandwich

Don’t be scared: This might be one of the best grilled cheese sandwiches you’ve ever tasted. Vegemite, you say? What the heck is Vegemite? Contrary to popular American belief, Vegemite is not a vegetable paste, but rather it is an Australian condiment, a yeast by-product that tastes absolutely amazing. Some people believe that Vegemite is an acquired taste.

Growing up with an Australian father and having had my fair share of Vegemite as a child, all I know is that I love the stuff. I dip my almonds in it, use it as a marinade for tuna, adore it on toast, and sometimes I get this mind-numbing craving for it that leads me to eating it straight out of the jar with my finger. I lovingly refer to this craving as Vegemitis.

It kinda looks like chocolate ganache in that photo, eh? Well here’s the deal: I believe that the reason Americans are so turned off by the stuff is because they think it should be spread on toast like peanut butter. No no no no no no no. The flavor of this stuff is very strong. A little bit goes a REALLY long way. To properly enjoy Vegemite, your toast should look more like this:

Now, I personally like to add more than what I’m showing you here…. But seriously, don’t go crazy with the stuff. The flavor is very salty, very distinct, and less is definitely more. I get my Vegemite from family members or I’ll always grab a jar when I’m in Sydney. I recently discovered that you can actually purchase it at World Market, and most likely at any sort of British Pantry you might have in the area. The awesome thing about Vegemite is that I swear it never expires. And since you really can’t use a lot at one time, the jar will last for quite some time.

This is yet another very simple recipe with outstanding results ๐Ÿ™‚

Tomato Avocado & Vegemite Grilled Cheese Sandwich

Ingredients:

  • 2 Slices Whole Grain Bread
  • 1 Slice Cheddar Cheese
  • 1 Medium Tomato, sliced
  • 1/2 Avocado, sliced
  • 1/2 -1 tsp. Vegemite
  • A little bit of butter

Butter one side of one piece of ย bread. On a grill or skillet over medium heat, place one slice of bread, butter side down and lay cheese on top.

As this piece toasts and the cheese melts, assemble the other half of the sandwich by buttering both sides of the bread, then spreading Vegemite on one side. Lay tomato slices on top of the Vegemite side and avocado slices on top of that.

When cheese melts, place that piece of toast on top of the assembled half and lay the uncooked half on the skillet to toast. Hopefully that makes sense ๐Ÿ˜‰

Allow to cook until that half is toasted as well. Remove from heat, slice as you like, and enjoy!

Ingredients
