Chocolate Chip Cookie Reese’s Pieces Brownies

So, in an attempt to eat perpetually healthy, sugar free, full-of-greens-and-protein food, I tend to walk into the grocery store with blinders on and head straight to the produce section, keeping my head low to avoid eye contact with the gargantuan display of seasonal items and candies. With Easter coming up, there are all the usual items: Peeps, Cadbury Creme Eggs, Robin’s Eggs, Marshmallow Eggs, pastel colored M&M’s and jelly beans… I know they’re there, and I choose to ignore them.

But then these clever little things caught my eye:

Seriously? Reese’s Pieces EGGS?! Ooooooooh….

So I decided that I was going to ignore them, too. They’re just Reese’s Pieces. Even though I love Reese’s Pieces, they’re available year-round! No point in buying them just because they’re pastel colored.

So I went about my business and continued to buy my asparagus, kale, spring greens, bean sprouts, mushrooms… All the healthy delicious things I could think of. But my mind was swirling with questions about those little eggs… Soooo, I went back to the little display and decided to feel what was in the package. Oh, and I was so wrong. They weren’t just Reese’s Pieces, small and colored for the season… They were literally EGGS! Like the size of the Robin’s Eggs! Like… it probably took at least the contents of 5 regular Reese’s Pieces to create one of those eggs! This is the stuff dreams are made of, people! 

And that cartoon bunny looks so unbelievably excited about having them in his basket… How could I resist putting them in mine?!

But I did. I resisted. I’m so healthy and awesome.

And for the rest of the week I danced and pranced merrily about in the meadow of Woodhouse Farms tending to the animals and the flowering fruit orchard.

I made friends with the songbirds, frolicked with the squirrels and the rabbits, splashed around in the waterfalls with the ducks, ate mouthfuls of grass with my favorite little pig, adorned myself in a long white skirt and spun in continuous circles on the top of the hill in the wee hours of the morning…

All the while dreaming about what I could do with those Reese’s Pieces Eggs. So many possibilities!

So I settled on one recipe. It’s no secret that I’m a big fan of layering cookies and brownies on top of each other… Chocolate chip cookie on the bottom, rich chocolate brownie on top, covered in wonderful, pastel colored, peanut butter filled candy eggs. This is the stuff dreams are made of…

Chocolate Chip Cookie Reese’s Pieces Brownies

Chocolate Chip Cookie Layer:

  • 1 Cup Butter, Softened
  • 1 1/2 Cup Brown Sugar
  • 2 Large Eggs
  • 1 tsp Vanilla
  • 2 1/4 Cups Flour
  • 1 tsp Baking Soda
  • 1 tsp Sea Salt
  • 1 12oz. Bag Semi-Sweet Chocolate Chips

Brownie Layer:

  • 1/3 Cup Unsweetened Cocoa Powder
  • 1/2 Cup (1 stick) Unsalted Butter, Melted
  • 1 Cup Sugar
  • 2 Large Eggs
  • 1 tsp Vanilla Extract
  • 1/2 Cup All-purpose Flour
  • 1/4 tsp. Baking Powder
  • 1/4 tsp. Sea Salt
  • About 1 Cup Reese’s Pieces Pastel Eggs (or to your liking) *

*When not in season, regular Reese’s Pieces will suffice. ALSO consider using Trader Joe’s Mini Peanut Butter Cups. They’re SO good and are made with all natural ingredients!

I previously commented that these Reese’s Pieces Eggs are pricey… Well, I guess that was just at Harris Teeter. Yesterday I made a trip to CVS and got four 10 oz. bags of these babies for $1.60 each! SCORE!

For the Cookie Layer: Preheat oven to 350. Cream together butter and sugar. Add vanilla. Add eggs, one at a time. In a separate bowl, mix together flour, baking soda, and salt, and slowly add it to the wet ingredients, mixing thoroughly. Stir in chocolate chips.

Spread evenly in a 9×13 glass baking dish.

For the Brownie Layer: Mix butter, sugar, cocoa powder and vanilla. Add eggs one at a time. In a separate bowl, mix together flour, baking powder, and salt. Slowly add these ingredients to the wet mixture, blending thoroughly.

Pour over the top of the Chocolate Chip Cookie Layer and spread evenly with a spatula.

Looks so goooooooood!

Sprinkle Reese’s PIeces Eggs evenly over the top of the brownie layer.

Place in the oven for 35 minutes. When finished, allow to cool completely on a cooling rack. Cut into squares, serve warm, at room temp, or out of the fridge! Tastes so good! 

And that, my friends, is my story about how I was seduced into buying those eggs, despite my best efforts to ignore them… But dang, these brownie things are good!
