Strawberry Banana Oat Bran Muffins with Peanut Butter Drizzle

I love breakfast!

I love strawberries, bananas, oat bran, peanut butter, and honey! Oooh, perfect… ’cause that’s exactly what I put in these muffins. Well, in them and on them. And then I ate them. For breakfast.

So maybe I shouldn’t say this “out loud,” but I’ve tried to make it a personal goal to post a breakfast item once a week. I want to post one every Sunday. I came up with this goal simply because I realized that up until the Apple Cinnamon French Toast Pancakes, I hadn’t posted a single breakfast item on this blog!  Breakfast is the most important meal of the day, what have I been thinking?! 

So I’d like to at least add a little bit more of a variety to my breakfast menu. And this makes breakfast recipe #3! Accomplishing big dreams here, people!

Strawberry Banana Oat Bran Muffins with Peanut Butter Drizzle

Ingredients:

  • 2 Ripe Bananas
  • 1 Cup Diced Strawberries
  • 1/2 Cup Oat Bran
  • 3 Eggs
  • 3/4 Cup Unsalted Butter, Softened
  • 1 Cup Sugar
  • 2 tsp Vanilla Extract
  • 2 Cups Flour
  • 2 1/2 tsp Baking Powder
  • 1 tsp Sea Salt
  • 2 Tbsp Milk

Peanut Butter Drizzle

  • 1 Tbsp Creamy Peanut Butter
  • 2 tsp Honey
  • 1/2 tsp Olive Oil

Preheat Oven to 350º

In the bowl of an electric mixer, cream together butter and sugar. Add eggs, one at a time and Vanilla Extract. Slowly pour in Oat Bran, mixing thoroughly. Add both bananas.

In a separate bowl, mix together flour, baking powder, and sea salt. Slowly add to the butter mixer. Add milk. Fold in the strawberries, or use the electric mixer to mix them in on low speed for only a few seconds (they taste so much better if they stay intact). Line a muffin pan with muffin liners, and fill each one about 3/4 full. Place in the oven for 18-20 minutes or until the muffins are springy on top. Remove from oven and allow to cool.

In a mug or microwavable bowl, whisk together peanut butter , olive oil, and honey. Place in the microwave for 10 seconds at a time, stirring between intervals, until it reaches a drizzly consistency.

Using a spoon or a whisk, drizzle that peanut butter honey mixture over each muffin.

I really love the peanut butter, jelly, and banana flavor combination.
