Eggs, Veggies, and Gotye

I’m so excited to bring you this breakfast recipe because it is absolutely packed with flavor, it’s low carb, high protein, and yowza wowza (yup), I have eaten it every single day this week because I just can’t get enough.

Know what else I can’t get enough of?

Gotye.  Seriously. I’m not really sure what happened. I’m sure you’ve all heard his song, Somebody That I Used to KnowI’ve been hearing it here and there for a couple of months now and I love it love it love it. It is, as a friend of a friend said on Facebook, “the best song that Peter Gabriel never wrote.” I want to hold my iPhone over my head and blast it on full volume outside someone’s window a la John Cusack in Say Anything. Although I guess it wouldn’t really make sense…

So I looked up the music video on YouTube and I was a bit confused. He is not at all what I imagined. And the music video was very strange. So strange that I had to watch it again. And then again. And then again and again and again! And then I saw this little interview of him and I said “OMG I’m in love.”

It’s no secret that I have a soft spot for Australians. Half my family lives there, after all! I also have a soft spot for adorably geeky guys that smile a lot. So take the Australian-ness, mix it with the geekiness,  throw in a million levels of talent and an incredible singing voice and you get Gotye. Mix that with my sudden need to draw him with markers and you get…

Oops.

Oh, but I couldn’t stop there… I haven’t drawn anything that’s not-for-work in so long… So I whipped out the charcoals and found a new picture of him…

I’m definitely a bit rusty, and next time I get the sudden urge to draw my new found crush, I’ll have a little more patience and spend more than an hour on the drawing…

I told my friend, Holly, to keep my crush on Gotye a secret. Well, I guess now that’s out the window…

Eggs Over-Easy with Sauteed Veggies

  • 2 Large Eggs
  • 1/2 Cup Asparagus
  • 1/2 Cup Sliced Mushrooms
  • 1/2 Cup Bean Sprouts
  • 2 tsp Minced Garlic
  • 1/4 Cup Pickled Mild Banana Peppers
  • Salt and Pepper to taste
  • Olive Oil

Quantities in this recipe aren’t quite as important, you can make it to your taste… But this is how I like it!

In a skillet or frying pan on high heat, toss asparagus with 1 Tbsp Olive Oil. Cook for 2-3 minutes, stirring occasionally. Add mushrooms and garlic, continue to cook for 2 more minutes.

Add the rest of your veggies and stir for a minute. Turn the heat down to medium and push all of the veggies to one side of the pan. Add a tsp of olive oil to the other side of the pan and crack 2 eggs on top

Cook for another 2-3 minutes and gently flip your eggs over, being careful to keep yolks intact. Cook for 1 more minute and serve!  Sprinkle with salt and pepper.

I love eggs over-easy. Mostly because I’m too impatient to wait for the whites to cook when they’re sunny-side up.

Unfortunately it’s a bit difficult to photograph these and make them look as delicious as they taste. But they taste soooooo good.

Eggs over-easy with sauteed mixed vegetables.

Ingredients
  • 2 Large Eggs

      It’s so funny to me that people don’t typically eat veggies for breakfast. I’ve always found them to be a wonderful and healthy addition to the morning, especially paired with eggs. But I told a co-worker about this recipe and he said “What? You eat vegetables for BREAKFAST?!” I’ve never even thought twice about it! Also funny thing about Gotye, when I titled the entry I thought to myself, People will probably think Gotye is a kind of cheese… ;)

    Oh yum! I am an egg-addict so eggs in any way do it for me. I eat eggs every other day, when I am on holidays I eat them every morning. Sauteed veg are the perfect accompaniment! Lovely, thanks for sharing this gorgeous little dish.

    Ps…I saw Kimbra (the female voice in that song you love) live, and my oh my that girl is a firecracker!!

      I love eggs, too! My favorite versions of eggs all include a runny yolk. Since I have ducks, I have the option of having fresh duck eggs and they are SO rich and delicious. If you can get your hands on some, definitely give them a try!

      Yes, I looked up Kimbra’s other work when I jumped aboard the Gotye train and she does appear to be quite the firecracker. Beautiful voice! If only I were so talented :)
