Super Healthy Cherry Cashew Breakfast Cookies

I feel like a health nut. I want to go to for a 6 mile run, do p90x, go to my personal trainer, make up an awesome new Zumba routine, and drink nothing but green smoothies aaallllll today. And then go out and single-handedly mulch my entire massive backyard. And then something else that requires a lot of energy because for some reason I feel like I’m just exploding with energy!

I’d really like to go for a hike… but unfortunately Charlotte is a long way from anything that even resembles a mountain. And who wants to waste the day driving?

Not me.

Anyway, before I go on my exercise excursion, I want to share a few things with you AND the recipe for these super healthy, flourless, butterless breakfast that use fruit and honey in place of sugar and are loaded with fiber AND protein… So first, some things with the garden:

I’m just so darned excited about this and it has to be shared. My pomegranate tree is in bloom! If you follow my Woodhouse Farms blog, you know I’ve been excited about this tree for some time. I buy my fruit trees bare-root and dormant, and I’ve already tried twice for a pomegranate tree, but when spring came along they showed no signs of life. Now I’ve got a pomegranate tree that is not only alive, but blooming the first year that I have it!

So beautiful! You can’t possibly imagine my excitement… I may very well have home-grown Angel Red Pomegranates this fall!

While getting this photo, this little fella came and landed on my fence. I have no idea what kind of bird this is. Anyone?

And finally… My ducks. Just because I love them, and they’re all in a row (hardy har har)

Now, on to these cookies!

These are healthy cookies and they taste healthy. That’s not to say that they taste bad, in fact, they actually taste quite scrumptious. But, they’re more like a Larabar, less like the gooey dessert cookies of Mrs. Fields. The only ingredient in them that is sugary and not so healthy, but totally optional, are these absolutely delightful

You can substitute these with just chocolate chips, or leave out the chocolate altogether. But as these cherries are gigantic, you can only really fit in 2 per cookie, and one cookie is pretty filling, so I can’t imagine why you wouldn’t want to splurge just a little!

Super Healthy Cherry Cashew Breakfast Cookies

  • 3 Cups Rolled Oats
  • 1 Cup Oat Bran
  • 1 Cup Honey
  • 2 Large Eggs
  • 1/2 Cup Nonfat Greek Yogurt
  • 1 Banana
  • 1/2 Cup Blueberries
  • 1 Lemon, juiced
  • 2 Cups Raw Whole Cashews
  • 1/2 Cup Dried Cherries
  • 1 Cup Chocolate Covered Cherries
  • 2 tsp Vanilla Extract
  • 1/2 tsp Sea Salt
  • 1 tsp Ground Cinnamon

Preheat oven to 350ยบ.

In a blender, blend together blueberries, banana, and lemon juice.

Pour blended fruits and cinnamon into a small saucepan and place on the stove over low heat, stirring constantly until hot. Remove from heat and stir in oat bran completely.

In a food processor (I have a Magic Bullet), pour 1 cup of raw cashews and 1 tsp olive oil. Process until a cashew butter forms.

In the bowl of your electric mixer, mix together cashew butter, fruit-oatbran mixture, honey, vanilla, salt, Greek Yogurt. Add eggs, one at a time. Slowly add rolled oats, one-half cup at a time. Fold in dried cherries, chocolate cherries, and 1 cup of raw cashews.

In a baking sheet lightly brushed with olive oil, plop heaping tablespoons of the dough. These do not spread, so you should press them down a bit and shape them like a cookie. Place in the oven for 12 minutes.

Eat these for breakfast, pre or post-workout, as an afternoon pick-me-up, or really any time!
