Greek Yogurnutters

Peanut butter–yes. Bananas–yes. Greek Yogurt– yes. Healthy– yes. Breakfast— what a way to start off!

These aren’t technically fluffernutters, as the “fluff” signifies the use of marshmallow fluff, but they’re so similar and “yogurnutter” sounds kind of silly to me. Yogurnutter. Yooooggguuuurrrrnnnuuutttteeerrrr. Hmm…

Yogurnutter it is. Greek Yogurnutters.

Honestly, the only thing even slightly difficult about these things is getting a good photo!

So, I’ve been starting my mornings off like this for a while now. This is 100% my favorite breakfast ever. It’s so fantastic because it provides all the essentials: Fiber, protein, good carbs, natural sugars, and some healthy fat. Totally well rounded, totally delicious, totally satisfying. Plus, they taste amazing.  They really are like a healthy fluffernutter, but with a little bit of tang from the yogurt, instead of the rush of sugar from marshmallow fluff.

Greek Yogurnutters

  • 2 Slices of Healthy Bread
  • 2 Tbsp. Natural Peanut Butter (Skippy Natural is my favorite)
  • 1/4-1/2 Cup Greek Yogurt (I use Fage 0%)
  • 1 Banana, sliced

Toast 2 slices of Really Good Bread (you can make your own, like my Multigrain Seeded Bread, or buy good bread. Check the label, you’d be surprised at what kind of crazy things are found in bread. I like Arnold Flax and Fiber bread or the Ezekiel breads are good too).

Spread 1 Tbsp of peanut butter onto each slice of toast. Spread 1/8-1/4 Cup of Greek Yogurt on top of the peanut butter. Distribute banana slices evenly on each piece. There is no real science to this, you can use as much peanut butter and yogurt as you want. I typically then sprinkle a bit of cinnamon on top because it just tastes so darned good!

Cut it into triangles if you wish, take it out on the patio, sit in the morning sun with a cup of coffee and smile!

Smile even more because you’ve just discovered that the birds in your bird box have just hatched and your Guava tree is flowering for the first time!

Wow, this really is the most wonderful start to the day. Now I just need a coffee maker…

Ingredients
  • 2 Slices of Healthy Bread

Instructions
  1. Toast 2 slices of good bread
  2. Spread 1 Tbsp of peanut butter onto each slice of toast.
  3. Spread ⅛-1/4 Cup of Greek Yogurt on top of the peanut butter.
