Triple Berry and Vanilla Bean Cream Parfait

Summer is here.

I know it’s still technically spring, but no one told the weather that. Yesterday was a blistering 90°, and even though I was prancing around in the cutest little sun dress and flip flops and spent a bit of the day with my legs in my parents’ koi pond, I still had that nice feminine “glow” (i.e. beads of sweat) glistening on my face.

I feel like people count Memorial Day Weekend as the beginning of summer anyway, right? That’s when all the pools open up and people start barbequeing everything in sight.

AND berries are starting to hit their peak season. YYYYeeeessssss!!!

Something I really love and have  always loved it s a good berry parfait. When I started really watching what I ate, I stopped eating them because I know then ones you get at the grocery store and restaurants and such are made with super sugary berry preserves. So much sugar and high fructose corn syrup and some even with gelatin. Plus the yogurt they use in them is typically the really sugary, artificially flavored kind too.

But did you have any idea how easy it is to make an absolutely delicious, completely healthy berry parfait? And I can’t even get over how much better it tastes than literally any parfait I’ve ever had before…

Triple Berry and Vanilla Bean Cream Parfait

(Serves 2)

  • 1 Cup Fresh Blackberries
  • 1 Cup Fresh Raspeberries
  • 1 Cup Fresh Strawberries, sliced
  • 1/2 Lime, Juiced
  • 1/2 Lemon, Juiced
  • 3 tsp. Honey
  • 1 Cup Whipping Cream
  • 2 tsp. Sugar
  • 1/4 Vanilla Bean, scraped
In a saucepan over medium heat, stir together blackberries, lime juice, and tsp. honey. Cover with a lid and allow it to get hot enough to start bubbling. Remove lid and stir until it thickens and is no longer runny. Pour into a container to seal and put in the fridge to cool. Repeat the same steps with a Raspberry-Lemon Juice- 1 tsp. Honey combination, and finally a Strawberries- 1tsp. Honey combination. Allow all fruits to cool completely and chill well (1-2 hours)
To serve, whip your cream until thick and peaks form. While continuing to whip, add the scraped contents of 1/4 of a Vanilla Bean and slowly add 2 tsp. sugar.
In 2 nice glasses, jars, or ice cream bowls, pour half the contents of the blackberries into each, then pipe or spoon a layer of whipped cream on top of that, pour half the contents of raspberries in each, pipe or spoon a layer of whipped cream on top of that, then pour half the contents of the strawberries into each, and finally top off with a nice dollop of whipped cream.
Serve immediately or place in fridge (preferably covered with cling wrap) to chill for later. Eat with a spoon and OH-MY-GOSH… Flavor explosion!

What else is great about these super-simple and totally healthy fruit sauces? Using them as an ice-cream topping, subbing Greek Yogurt for Whipped Cream, using them on toast… I can’t wait to make more!
