OK, Daylight Savings Time, you’ve tricked me again! My iPhone changes times automatically… Or at least it did on Sunday! Then yesterday morning, for no reason at all, it switched back to the wrong time, sending me into a whirlwind of confusion! Luckily for me, this is the time of year that we gain an hour, so all that happened was that I thought it was an hour earlier than it actually was. Thank goodness I didn’t have to go into the office!

I’m not sure if it’s noticeable, but my website has switched from a WordPress.com hosted site to a self-hosted WordPress.org site. I switched it over so I could start expanding the site and bring some pretty cool features to The Pescetarian and the Pig. Unfortunately in the move, not all of the subscriptions transferred. If you are one of the 500 subscribers that went missing ( 🙁 ) , please re-subscribe! I miss you!

Now, let’s start out the new site with these wonderfully tasty, very healthy, low-carb roll-ups!

Low-Carb Smoked Salmon and Avocado Roll-ups

(Serves 1 as a meal, or 8 as hors d’ oeuvres)

  • About 5 large Romaine Lettuce Leaves, ribs removed
  • 4-5 Strips of Nova Smoked Salmon
  • 5 Cherry Tomatoes, sliced
  • 1/4 Cup Fresh Dill, thick stems removed
  • 2 Tbsp. Fresh Chopped Chives

Avocado Spread:

  • 1/2 Avocado
  • 1 Tbsp. Chevre Goat Cheese
  • 1/2 Lime Juiced
  • 1/4 tsp. Sea Salt
  • Fresh Cracked Black Pepper to taste

For the Avocado Spread: In a small bowl (or glass, as I like to use), place lime juice, diced avocado, goat cheese, sea salt, and black pepper. Using a fork or a small whisk, smash the ingredients together until semi-creamy, but still chunky.

 

Choose the biggest leaves of lettuce you can, cutting out the rib, and lay them on top of Saran wrap allowing them to overlap each other by 2 inches horizontally.

Spread the avocado spread thickly down the leaves, perpendicular to how they are laying. Keep the ingredients a little left of center so they can be properly rolled up.

Lay out the remaining ingredients on top of the avocado spread. Starting from the left side and using the Saran wrap to help you, gently begin rolling up the lettuce wrap much like you would a sushi roll. Once rolled, use toothpicks to secure the roll in place and make your cuts between the toothpicks.

You will probably end up discarding each end, as they tend to have a very uneven distribution of ingredients.

Eat this roll-up all by yourself (like I did), or serve as an appetizer or hors d’ oeuvres.

 Aren’t they lovely?
