Peppermint Hot Chocolate Cookies

I am so unbelievably happy right now. The Christmas season puts me in the best mood ever! I’ve already Christmas-themed my website, put up all of my decorations (I’m getting a tree on Thursday! Wahoo!), and last night I watched Home Alone. Love!

Yesterday I went to Bed Bath and Beyond and bought some Christmas-y scented candles, including one Red Velvet Cake scented candle (yum), which is apparently pretty convincing because Cupcake keeps trying to jump up on the coffee table to eat it (I’ve since moved it to higher ground).

So I came across these wonderful peppermint chips at the grocery store and knew just what to do with them. Last year I wanted to make Peppermint Hot Chocolate Cookies, but I had tried using real crushed up candy canes and it was a little bit of a disaster. So I tried my luck again with these, and by golly they worked. I also found vegan marshmallows at Whole Foods (which I went to for the first time ever and also purchased agar agar) called “Dandies.”

These are a great find for me, since I can’t eat regular marshmallows as they’re made with pig gelatin ( 🙁 ). But the Dandies worked great! I just cut them into fourths to make them into mini marshmallows.

These are wonderful, especially warm from the oven. They have the crispy outside and chewy inside of an all-butter cookie and taste just like peppermint hot chocolate.

Peppermint Hot Chocolate Cookies

  • 1/2 Cup Unsalted Butter, softened
  • 1 Cup Brown Sugar
  • 1/2 Cup White Sugar
  • 1 tsp. Vanilla
  • 2 Eggs
  • 2 Cups Flour
  • 1/3 Cup Unsweetened Cocoa Powder
  • 1 tsp. Baking Soda
  • 1/2 tsp. Sea Salt
  • 1 Cup Mini Marshmallows (or Vegan Dandies cut in quarters)
  • 1 Cup Andes Peppermint Crunch baking bits

Preheat oven to 350°

Mix together butter and sugar until creamy. Add vanilla, eggs, and cocoa powder.

In a separate bowl, sift together flour, baking soda, and salt. Slowly add to the wet ingredients, mixing well. Stir in the marshmallows and peppermint bits until evenly distributed.

On a baking sheet lined with parchment paper, drop dough by the tablespoon about 3 inches apart. Place in the oven for 8-10 minutes.

Be careful while sampling the dough, as I’ve found it to be pretty addictive 😉
