So, funny little story, the idea for these babies was actually birthed while I was searching for Andes Peppermint Chips so I could make a whole bunch more of my Peppermint Hot Chocolate Cookies to give as gifts. Seems like those baking chips really caught on this year, because every grocery store within 20 miles of me is completely sold out of them!

IMG_6278So I thought, fine, you know what? I guess I’ll try my luck at Target. They’ve gone all grocery-store-y in the past couple of months…

Well, no such luck. I never came across those baking chips. But I DID come across White Chocolate Peppermint M&M’s! Initially I thought I’d just sub them in the recipe, but then I thought “No no noooooooo, I wonder how these would taste as a macadamia cookie!”

And they taste a-MAZE-ing!  My recommendation? Make sure you undercook them a tiny bit. The doughy center makes these cookies so… so… well I don’t know how to describe it! SO good, just trust me on this one.

Peppermint White Chocolate Macadamia Cookies

  • 1/2 Cup Unsalted Butter
  • 1 Egg
  • 2 Egg Whites
  • 1 Cup Brown Sugar
  • 1/4 Cup White Sugar
  • 1 tsp. Vanilla Extract
  • 2 Cups All Purpose Flour
  • 1/2 tsp. Sea Salt
  • 3/4 tsp. Baking Soda
  • 1 Cup Dry Roasted, Unsalted Macadamia Nuts
  • 1 Cup Peppermint White Chocolate M&M’s

Preheat oven to 375°

In your mixer, mix together butter and sugars until creamy. Add egg and egg whites one at a time until well incorporated. Add vanilla.

In a separate bowl, mix together flour, salt, and baking soda.

Slowly add your dry ingredients to your wet ingredients while the mixer is still going.

Add Macadamias and M&M’s

On a baking sheet lined with parchment paper or silpat mat, place rounded tablespoon-sized scoops of dough about 2 inches apart.

Place in the oven for 8 minutes or until edges are just barely beginning to brown.

Remove from oven and allow to cool for 2 minutes before moving onto a wire rack.
