Vegan Gelatin with Chia SeedsSo, looking for a fun, refreshing, low calorie, low sugar snack that jiggles like Jell-O and is also vegan? These should satisfy your craving! Made from agar agar, a sea plant, this is one awesome way to avoid the animal-derived gelatin (which to Cupcake’s chagrin, is usually made of pork 🙁 ), but still have the beloved treat from childhood.
And I added chia seeds. Why? Well, for one thing they’re all the rage, they’re also a great source of Omega-3’s and other nutrients, they’re flavorless, and quite frankly, I thought having them suspended in a jello snack would look pretty cool. They do, don’t they?!
To keep these low-sugar and low-calorie, I turned to Crystal Light for flavoring. However, since original Crystal Light is made with aspartame, which is rumored to have a million side-effects (although apparently none of them have been scientifically proven), and I’m not a personal fan of artificial sweeteners, I was really excited to find out that they have come out with an all-natural product, Crystal Light Pure.
This version of the product is not sugar-free like its original counterpart, but if you make your snack into 2 servings (as shown), it only has 4g of sugar per serving. That’s pretty awesome! And just one pack of the tropical blend added the perfect amount of flavoring. Truly delightful, and the chia seeds (look awesome) are virtually undetectable! Take that healthy snack and put it in your back pocket (or don’t, cause it’d be a little messy…)!
Vegan Gelatin with Chia Seeds
- 2 Cups Water
- 1 Tbsp Agar Agar Flakes
- 1 Packet Crystal Light Pure Tropical
- 1 Tbsp. Chia Seeds (optional)
In a saucepan with lid over medium-high heat, bring water and agar agar flakes to a boil, stirring occasionally. Lower heat and allow to simmer for about 5 minutes or until the agar agar flakes have dissolved.
Remove from heat and add Crystal Light, stirring it in well. Pour into 2 trifle cups, little ramekins, or into a glass pyrex baking dish. Add chia seeds (separate the Tbsp. into equal servings).
The chia seeds will sink to the bottom. In order to get them to suspend in the gelatin, allow it to cool slightly, then add a couple of ice cubes and stir. As the mix cools further the chia seeds will become suspended. Place in the refrigerator to chill for at least 2 hours before serving.
