Baked Eggs in Avocado with Guacamole

Uh oh.. It’s my birthday again! I swear, I don’t feel older. Although, I’m way past the days of proudly adding fractions at the end of my age to make everyone aware that I’m a big girl– I’m four and a half! 

Oh, how I wish I were only four and a half. Monkey bars seem to have happened to me in a different lifetime. By the time I was 8, I was tall enough to reach them merely standing up, so swinging from them became impossible without dragging my feet along the bark chips on the playground. The woes of being an early bloomer.

This year I’m spending my birthday in lovely Palm Springs, California. I came out here to visit my parents in La Quinta and to attend the Palm Springs International Film Festival. Despite being in the desert, it’s been freezing all week and the wind has made being outside feel pretty unbearable— which makes it the perfect week for movie watching!  The first movie I saw was the French film, The Intouchables. It was absolutely outstanding! Unfortunately, it got my hopes way up for the remaining films on my list, which were all sadly very disappointing.

Then I saw Gangster Squad (not in the festival), and I quite liked it. A friend of mine argues that it was a terrible movie and now I can’t decide whether or not it was actually good or if it was just a relief from watching 2 hour long movies in subtitles during which absolutely nothing happens. At least this one had guns, Ryan Gosling, and a keen sense of fashion! Apparently it’s pretty easy to win my movies affections. Judging by the fact that I’m also quite enthralled with the show, Downton Abbey, perhaps it’s really just period pieces and costumes that I love.

For my special birthday breakfast this morning, I’m having these delightful baked eggs inside of avocados. Topping these with guacamole made from the avocado flesh removed to create room for the eggs seemed like the perfect idea, especially given my current location. These are lovely on top of toast (scooped out of the peel, of course), as the yolk stays runny and amazing. Add a little Vegemite to that toast, and you’ve got yourself a birthday breakfast fit for a queen!

Baked Eggs in Avocado with Guacamole

  • 1 Avocado
  • 2 Eggs
  • 1/2 Medium Tomato, diced
  • 2 Tbsp White Onion, chopped
  • 1 Garlic Clove, minced
  • 1 tsp Lime Juice
  • Sea Salt to taste

Preheat oven to 450°.

Cut the avocado in half and remove the pit. Scoop out enough flesh to leave about a 1/2 inch border of flesh remaining in the peel of the avocado and reserve in a small bowl. Score the remaining avocado flesh crosswise and lengthwise, not cutting the peel.

Crack an egg into each avocado half and prop each half up by creating a little holder for each out of aluminum foil. To do this, simply take a bit of aluminum foil and shape it into a “u” shape, and prop it up under the smaller end of the avocado. This will keep the egg from spilling out of the avocado as it bakes.

Place the avocado halves in the oven on a baking sheet for 15-20 minutes or until the egg whites are cooked, but the yolk remains runny.

Meanwhile, while the eggs are cooking, mix the reserved avocado flesh, tomato, onion, garlic, lime juice, and salt together with a fork for a chunky guacamole. Set aside.

Remove baked eggs from the oven and serve topped with guacamole (or on the side) and a bit of Greek yogurt or sour cream.

    Happy B-day girly!!!! Sounds like you are in a really fun place to celebrate your B-Day! I love this advocado dish…what a great idea. I would have never thought of cooking my egg in an eggs at th advocado. Todd just bought some duck eggs and Quail eggs at the 7th street market and I just might be trying this for a saturday morning breakfast!
