Pear Citrus Vinaigrette

Healthy, simple, and unquestionably delicious salad dressing is only a couple of steps and a mere 5 ingredients away!

And this particular dressing is so good, it will make you forget all about the heartbreak you experienced when you found out that Dawson’s Creek on Netflix has a different theme song than that beloved Paula Cole “I Don’t Want to Wait” song from your childhood.  *Tear*

Homemade dressings are great for so many reasons: They’re undoubtedly unique, easily customizable, preservative free, and as simple as they truly are, people always seem to be really impressed when you let them know that their salad is topped with dressing made from scratch.

Plus, you can serve them in the adorable little glass jars and bottles that you found at the craft store and you just had to buy even though you had no clue what you were going to do with them, but they were way too cute to pass up.

See? All of life’s biggest problems, solved.

This Pear Citrus Vinaigrette is a little bit sweet, a little bit zesty, and packs one heck of a lot of flavor. It goes perfectly with salads that feature cheese crumbles like Blue, Feta, Goat, and even Brie. Walnuts and pecans would also be wonderful additions to the salad you see here, which is a simple spring mix topped with steamed beets, avocado, and crumbled chevre goat cheese. Featured in Episode 3!

I was actually semi-inspired by Trader Joe’s Champagne Pear Vinaigrette salad dressing. Before I came up with the Pear Citrus Vinaigrette, it was my favorite thing to put on this particular salad, so I had a good feeling about it working. Their version has champagne vinegar and gorgonzola cheese and whatnot in it. I actually have ended up liking this version better 🙂

I substituted hemp seed for the oil. It was very good.
