Cinnamon Cocoa Coated AlmondsI could listen to Liam Neeson talk all day long. Aaalllll dayyyyy. His voice has this smooth, velvety richness to it that I find very soothing.

This morning at the gym I elected to do my elliptical workout in the movie room because I saw that Batman Begins was playing, and I love some Christopher Nolan style Batman (and Christian Bale, and Michael Kane, and Morgan Freeman… dang they made some good casting choices in that series). I closed my eyes when the sweat started pouring and there it was. The sweet sweet sound of Liam Neeson. It was like being engulfed in a cashmere blanket. Bathing in hot chocolate on a cold winter’s day. Floating on a fluffy cloud of pavlova.

No no, it was like…. Cinnamon cocoa almonds. Smooth, bittersweet, with a hint of honey and spice.

Yup. Just like Liam Neeson.

Cinnamon Cocoa Coated Almonds

  • 1 Cup Raw Unsalted Almonds
  • 2 Tbsp. Natural Unsweetened Cocoa Powder
  • 1/2 tsp. Ground Cinnamon
  • 1/2 tsp. Honey or Agave Nectar
  • 1/2 tsp. Vanilla Extract
  • 1 tiny pinch Sea Salt

Mix cocoa powder, cinnamon, and sea salt together in a food processor. Pour into a gallon-sized Ziploc bag. Set aside.

In a deep saucepan over very low heat, stir almonds, honey, and vanilla until just coated. Remove from heat (the almonds should not be heated, the very low heat is just to make the honey liquify better to easily coat the almonds).

Pour almonds into the baggy with the cocoa powder. Seal the baggy and shake until almonds are well coated. Store in a ziploc or other airtight container.
