Oooooooh, I’ve got a zesty one for you today! A very zesty, very healthy, very refreshing salad dressing that will probably make you want to drink a Corona and sit by the pool. Isn’t funny how tastes and smells prompt your activity cravings?

Eggnog and chocolate peppermint, no matter what time of year, put my brain into sit-in-front-of-the-fireplace mode. Cilantro and lime have me wanting to wear a bathing suit on a snowy day (ah, who am I kidding? I don’t even like to wear a bathing suit on a hot day).

This tasty dressing has just a hint of fresh coconut and it’s bound to liven up your salad. You know what else, though? It works really well as a marinade for fish and shrimp. It’s such a perfect refresher for a hot summer’s day. See how wonderfully it pairs with my Chocolate Chipotle Seared Salmon Salad. 🙂

  • 1/4 Cup Fresh Squeezed Lime Juice
  • 3 Tbsp. Fresh Chopped Cilantro
  • 2 Tbsp. Apple Cider Vinegar
  • 1 Tbsp. Olive Oil
  • 1 Tbsp. Frozen Unsweetened Coconut Flakes (thawed)
  • 1/2 Clove Fresh Garlic, Minced
  • Pinch of Sea Salt

In a blender or food processor, mix together all ingredients until thoroughly blended.

Use immediately or store in a covered container in the refrigerator for up to a month. Shake well before using (the oil and vinegar will separate as the dressing sits).
