Sweet and healthy and it tastes so goooooood (sung to the tune of Reunited by Peaches and Herb)! This mixture of dark chocolate, almonds, chia seeds, and oranges is just that. Crunchy, delicious, healthy, and just a handful should satisfy your hunger. Plus, don’t the chia seeds look totally adorable? Like little tiny baby almonds piggy-backing on the big mommy almonds (maybe that’s just me…)

OMG, not to get totally off topic here, but speaking of “reunited”… Have you been watching the new episodes of Arrested Development on Netflix? Hilarious! The first couple of episodes started off a little bit slow for me, but once the plot got to Lindsay and Tobias’ story it really started picking up for me. People with “face blindness”, gentleman honey farmers… Best characters ever: Tobias and Gob. I want so badly to start spouting out plot lines and so many hilarious quotes, but I don’t want to spoil it for anyone who is intending on watching it. Everyone should watch it. For serious. And when you do, let me know, so we can have a secret club and talk about all of the episodes behind everyone’s backs like gangsters. Thanks.

  • 1 Cup Raw Unsalted Almonds
  • 2 Tbsp. Fresh Squeeze Orange Juice
  • 1 Tbsp. Orange Zest
  • 1 Tbsp. 100% Pure Grade B Maple Syrup
  • Pinch of Sea Salt
  • 2 tsp. Chia Seeds
  • 1/4 Cup Dark Chocolate Chips (I use Ghirardelli 60% Cacao Chips)
  • 1/4 Cup Freeze Dried Oranges

In a saucepan over medium heat, mix together almonds, orange juice, orange zest, and maple syrup. Stir continuously until almonds are coated and liquid is reduced, only 2-3 minutes.

In a ziploc or large sandwich bag, mix sea salt and chia seeds. Pour coated almonds into the bag and shake to coat thoroughly with chia seeds.

Pour out onto a plate or baking sheet and allow to cool completely. Mix with dark chocolate chips and freeze dried orange pieces and store in a ziploc bag, a sealed container, or serve in a bowl.

      Chia seeds are wonderful! They’re so packed with nutrition and honestly have no impact on the flavor of what you’ve added them to. They’re a great way to add so many nutritional benefits with minimal caloric impact, too.
