Mixed Berry Stuffed Crescent Rolls

Mixed Berry Stuffed Crescent Rolls. Mixed Berry Stuffed Crescent Rolls‘Tis the season to put berries in practically anything you can! They’re overflowing at the grocery store and in case you haven’t heard, they’re amazing.  Truly, truly amazing. I pity the fool who has not had a fresh blackberry, strawberry, blueberry, or raspberry. And sadly, I know that there are actually people out there who haven’t… and if you’re one of them, I am sorry.

Mixed Berry Stuffed Crescent RollsIf it makes you feel any better, it’s also the season for it to pour down rain for 5 days and then to suddenly be 95° outside… and the AC at the gym is broken (which is maybe good? Does that mean I got a double workout this morning?)… but worst of all, your pig digs up the currently flooded yard and rolls in the mud… then bursts through the door and walks allllll through your newly swept and mopped house, tail wagging, mud flinging everywhere. Oh, Cupcake. Thanks for being a pig. Your cloven hooves make my world go ’round.

Now, moving on to these tasty crescent rolls: They are deliiiiiicious!!! Oh, yes they are! And, holy cow, talk about a quick dessert to whip up in a time crunch. Store bought crescent roll dough + mixed berries + 20 minutes + ice cream = WIN! A fantastic win, at that. Or, you could actually even serve them for breakfast or brunch with a little bit of fresh whipped cream instead of ice cream (or eat ice cream for breakfast. I promise I won’t judge you!)

rollupFollow the pictorial tutorial (poem!) above to fold these up. The pre-cut crescent triangles will need to be slightly stretched out to fit more berries. Then, fold two sides of the triangle into the center of the berries and roll ’em up! Press the dough together to contain the berries. Aren’t they precious?

Makes 8

  • Store Bought Crescent Roll Dough (I used Trader Joe’s brand)
  • 1/4 Cup Strawberries, diced
  • 1/4 Cup Raspberries
  • 1/4 Cup Blackberries
  • 1/4 Cup Blueberries
  • 2 Tbsp. Lemon Juice
  • 2 Tbsp. Granulated Sugar
  • Ground Cinnamon
  • 1 Tbsp. Raw Sugar for Garnish
  • Vanilla Ice Cream or Whipped Cream for serving

Preheat oven to 350° (or the temperature specified by your crescent roll dough container).

Mix berries, granulated sugar, and lemon juice together in a bowl. Stir until well mixed. Set aside.

Lay out the dough and separate the pre-cut triangles. Stretch them out a bit to create a bigger surface area for you to lay the berries on.

Sprinkle the dough with ground cinnamon.

Place a couple of tablespoons of the berry mixture onto each triangle (do it with a fork, so the liquid strains back into the bowl). Try to evenly distribute the types of berries within each roll.

Roll up by folding 2 opposite triangle corners into the center, then roll toward the last corner. Press the dough closed to contain the berries.

You will have some extra berries and juice in the bowl, set these aside.

Very lightly brush the rolls with a little bit of water and sprinkle with raw sugar.

Place in the preheated oven for 12-15 minutes (or as long as your crescent roll container tells you), or until golden brown.

Serve hot over ice cream and top with the remaining berry mixture. Amaaaazing!
