Double Chocolate BBQ Potato Chip Cookies Did I do it? Oh, yes. Yes, I did. I saw a million different photos of potato chip chocolate chip cookies and I thought “You know, I really don’t like potato chips… But I DO like BBQ potato chips!” I also really like chocolate. Too much to only incorporate it into a cookie in one form. I knew that this was a risky combination and that it definitely sounds crazy (have you tried my Chocolate Chipotle Seared Salmon Salad yet?), but once I put a Hickory BBQ Potato Chip and a couple of Chocolate Chips in my mouth together and gave them a good munch munch munch, I knew I was going to be creating food magic.

I used Trader Joe’s Hawaiian Style Hickory BBQ Potato Chips because they are my all-time favorite BBQ chips, but something like Lay’s would work as well. The resulting cookie is chewy, chocolatey, honey goodness with the sweet and savory spices of a mesquite BBQ potato chip. Each bite tastes delightfully different and it’s like a party in your mouth. Like, a literal party in your mouth. Like, when you go to a party and the brownies and the BBQ potato chips are sitting pretty close to each other on the table and you really want both and you don’t have a whole lot of patience to enjoy your sweet and your savory one at a time, so you shove a brownie into your mouth while you’re still finishing chewing up those chips you shoveled in by the handful only moments earlier. Tell me I’m not the only one. Tell me!

The verdict on this combination from my taste testers (of about 30 people) came out 98% favorable. For those who liked them, they loved them. They had that look of ecstasy and the ooh’s and the aah’s of a mouthful of deliciousness. For those who weren’t the biggest fans, they thought the flavor combination was “too confusing” for their liking. One tester said “I’m not exactly sure what’s happening in my mouth right now.” Haha, that’s the funniest review I’ve ever gotten.

Personally, I didn’t taste the cookies at all until after I’d gotten the reviews. Then, on the way home with only 2 cookies left, I took a bite of one and could have died of happiness. I swooned at the amazing flavor combination and let out a sigh of complete rapture, then promptly stuffed the second cookie into my mouth as well.

Double Chocolate BBQ Potato Chip Cookies

Makes 2 Dozen

  • 1/2 Cup Butter
  • 1/2 Cup Brown Sugar
  • 1/4 Cup White Sugar
  • 1 tsp. Vanilla Extract
  • 1 Large Egg
  • 2 Tbsp. Honey
  • 1/4 Cup Unsweetened Cocoa Powder
  • 1 Cup Flour
  • 1/2 tsp. Baking Soda
  • 1/2 tsp. Sea Salt
  • 1 Cup Dark or Semisweet Chocolate Chips
  • 2 Cups Hickory BBQ Potato Chips

Preheat oven to 375°.

In a large bowl, mix together butter and sugars until creamy.

Add vanilla, egg, and honey and mix thoroughly, then slowly add cocoa powder.

In a separate bowl, mix together flour, baking soda, and salt. Slowly add to the wet mixture with your mixer going.

Stir in chocolate chips and BBQ Potato Chips.

On a baking sheet lined with a Silpat or Parchment Paper, drop dough by the tablespoon about 2 inches apart. Place in oven for 8-10 minutes.

Allow to cool for 2 minutes before removing to a cooling rack.
