Peach Mango Chia Pops. Peach Mango Chia Pops It’s August already! It’s sweltering hot outside and the cicadas are out in full force, chirping that odd chirp that I find so relaxing in the summer evenings.  Today I’m offering up a healthy, refreshing treat to save you from the blistering heat. Well, maybe I wouldn’t go as far as saving you, but it’ll certainly make it more tolerable.

Peach Mango Chia PopsSo simple with no added sugars or sweeteners, just straight up fresh fruit and coconut water. I added chia seeds to these popsicles because they add even more nutritional value to the already vitamin-packed peaches and mangoes, they’re completely flavorless, and they look totally cute. Like little freckles in my popsicle! I love it!

The amount of juice needed will vary depending on the size of your popsicle mold, but the ratio in the recipe is appropriate for doubling, etc. To be honest, I hate the sticks that were included with my popsicle mold. They’re red, blue, and yellow and remind me of stacking toys from preschool… So, I opted to create my own sticks by purchasing clear plastic spoons and breaking the spoon tips off, then using them as popsicle sticks! Yay! They look so much cuter.

Makes 6

  • 1/2 Cup Pure Coconut Water
  • 1 Large Peach, Skinned and Pitted
  • 1/2 Large Mango, Skinned
  • 1 Tbsp. Fresh Lime Juice
  • 1/2 Cup Water
  • 2 tsp. Chia Seeds

In your blender or food processor, blend first 5 ingredients until smooth.

Add chia seeds and blend briefly, just until mixed through.

Pour into a popsicle mold, insert sticks, and place in the freezer for at least 5 hours or overnight.

Remove from molds and serve promptly. Enjoy 🙂
