Salted Caramel Oreo Brownies.
Surely you remember when I sang the praises of amazing coconut cream, right? How I’d developed a major crush on it and just wanted to use it in everything that I possibly could?
Well, I did.
OK, that’s a little bit of an exaggeration… not quite everything… yet. But I did use it in these brownies as a complete butter replacement, and I have honestly never tasted better brownies in my life.
I realize that I say that a lot. I get super enthusiastic about food that tastes really good, and even now I’m thinking about some of the other brownies that I’ve made and I’m trying to figure out which ones I actually like better. But they’re totally different than these anyway. A totally different texture altogether because these are made with coconut cream! The coconut cream lends itself to the most incredible fudginess in the universe! Seriously.
So, take that and combine it with everyone’s favorite cookies: Oreos. Yum. But let’s not crumble them up; no! I don’t want little pieces of Oreos in my brownie, I want an ENTIRE freaking Oreo in my brownie! And there’s no way I want to stop there when I can top this Oreo-hugging brownie with Salted Caramel Sauce. I used Trader Joe’s Fleur de Sel Caramel Sauce. Yes, that’s Sea Salt Caramel Sauce. Omigosh.
I originally created this recipe to bring to a group of kids on “zombie day” at their acting camp, so I lovingly dubbed them “Zombie Brownies.” After eating about 50 million of them myself, then making a second batch to bring to the kids (truth), I realize that even though I love the name Zombie Brownies probably wouldn’t translate as well onto the blog. So for here, they’re Salted Caramel Oreo Brownies, but in my real life, they’re Zombie Brownies. I will totally bust them out for the season 4 premiere of The Walking Dead, for Halloween, and again for the Season 4 Finale of The Walking Dead. Holla!

Salted Caramel Oreo Brownies
- 1 Cup Coconut Cream
- 1 Cup Brown Sugar
- 1 Cup White Sugar
- 2 Eggs
- 1 tsp. Vanilla
- 1/2 Cup Unsweetened Cocoa
- 1/2 tsp. Baking Powder
- 1/2 tsp. Sea Salt
- 1/4 tsp. Cinnamon
- 2 Cups Flour
- 1 Cup Dark Chocolate Chips
- 1 Package Oreos or Joe Joes
- 1/4 Cup Fleur d’ Sel Caramel Sauce
Preheat oven to 350°.
In a large bowl with a mixer, mix together Coconut Cream and both sugars until creamy. Add eggs one at a time and vanilla. Add cocoa.
In a separate bowl, mix together flour, baking powder, salt, and cinnamon. Slowly add dry mixture to wet mixture until thoroughly mixed.
Add chocolate chips.
In a 9×13 glass baking dish, spread half of the brownie mixture evenly. Place Oreos (in the photos shown, I used Trader Joe’s brand, Joe-Joes) evenly in rows across the top of the brownie mixture (mine was 4×5 Joe-Joes, so 20 total.) Press them gently into the brownie layer.
Evenly spread the rest of the brownie mixture across the top of the Oreos with a spatula.
Finally, drizzle caramel sauce over the top of the brownies.
Place in the preheated oven for 25 minutes.
Remove from oven and allow to cool completely before serving.
