So, this is a recipe that I have been churning over and over and over again in my head for weeks. Weeks, I tell you!

I’ve been wanting so badly to mix peaches and pepper jack cheese together. I am one of the truest believers in the Sweet+Savory=Love equation, but Sweet+Savory+SPICY? Holy cow, that gets me doing The Worm up and down the aisles of the grocery store and I don’t even care who sees it!

Plus, as my regular readers know, I’ve had so many durned peaches coming off of my 2 peach trees that I could’ve probably supplied all of North Carolina with peaches for a year! Eh… maybe that’s an exaggeration. Or is it?…

Of course, leave it to me to not make the typical peach cobbler, peach pie, or peach crisp, but to instead create the ultimate spicy peach grilled cheese sandwich. This is a twist on the American classic that quite honestly is better than the original. Yes, I realize that it sounds a little bit strange. When I presented the idea to my parents they both gave me a very doubtful look…

In fact, I even called my dad up and offered to come over and make it for him for dinner and there was a long long silence, followed by “… ummmm… I mean… I guess I’ll give it a go…”

But guess what?! He loved it! He even said, “Wow, this is really good! Really good! This is even better than the original!” Hence my earlier claim (it sounds much more charming if you read it with his Australian accent). As he described it, the peaches and chili powder make it taste almost like it has a chutney in it. I gobbled up the sandwich I used for the photos. Well, I ate half of it and then very reluctantly shared the other half with Cupcake who scarfed it down so quickly that I couldn’t even remember time elapsing after I had handed it to her and I started looking for it on the floor.

The creamy texture of the Port Salut adds so much to this sandwich, especially when it heats up on the skillet. The peaches warm up and begin to caramelize with the aromatic chili powder, while the pepper jack carries the heat and the saltiness. I used Arnold Country Oatmeal Bread for its mild flavor and perfect thickness, but this would be equally good on sourdough or french bread.

In yet another winning combination, peaches never cease to amaze me. 🙂

Per Sandwich

  • 2 Pieces of Bread
  • 1/2 Fresh Ripe Peach, sliced
  • 1/2 tsp. Chili Powder
  • 1 Tbsp. Port Salute Cheese, Softened
  • 1/8-1/4 Cup Shredded Pepper Jack Cheese

To assemble: spread Port Salute on 1 slice of bread. Lay peaches evenly on top, sprinkle with chili powder, and spread shredded Pepper Jack on top of that. Place 2nd slice of bread on top.

On a nonstick skillet over medium heat, place assembled sandwich and cook until browned, about 2 minutes each side.

Slice and serve hot!

Ingredients
  • 2 Pieces of Bread
