Chocolate Covered Peanut Butter Banana Crisps

I’m pretty much a fan of banana anything. Mix those bananas with peanut butter or chocolate and I jump for joy. Combine all three? Well there’s a recipe that will likely set me adrift on a cloud. I got these freeze dried banana crisps at Trader Joe’s. They’re incredible. All by their little selves. They’re just little crispy, simple, nothing-but-freeze-dried-banana crisps with a texture reminiscent of the marshmallows inside of Lucky Charms. I always had a thing for those marshmallows, specifically for their texture. And I swear that freeze-dried fruit used to only be available at science museum gift shops in little baggies labeled “Astronaut Food.” Please tell me I’m not the only one that remembers that! Chocolate Covered Peanut Butter Banana Crisps The banana crisps make these healthy little snacks truly candy-like. The crispy crunch combined with the creamy peanut butter and the smooth, rich chocolate is just incredible. Eat these by themselves as a simple satisfier for your sweet tooth, or serve them on top of ice cream or yogurt for a surprising treat. Chocolate Covered Peanut Butter Banana Crisps

  • 30 Freeze dried Banana Slices
  • 1/4 Cup Creamy Peanut Butter
  • 1 Cup Dark or Semisweet Chocolate Chips

Line a baking sheet with waxed paper or a silpat mat.

Spread about 1/2 tsp. worth of peanut butter onto one side of each freeze dried banana slice. Place the slices, peanut butter side down, onto the lined baking sheet and place in the freezer for 30 minutes.

After 30 minutes, melt chocolate chips over a double boiler or in the microwave. If using the microwave, use a microwave-safe bowl and heat the chocolate chips for one minute. Stir, and continue to heat in 20 second intervals, stirring between, until melted.

Peanut butter thaws very quickly, so the best way to do this next step is to line another baking sheet or a plate with waxed paper or use a 2nd silpat mat and set aside. One at a time, remove a banana chip from the freezer, dip it in the melted chocolate with a fork to coat, and set it on the mat. Allow chocolate to harden at room temperature.

Keep at room temperature or in the refrigerator in a sealed container for up to a week.

*Keeping the peanut butter frozen until immediately before placing it in the melted chocolate will prevent the peanut butter from melting and mixing with the chocolate when dipped. Chocolate Covered Peanut Butter Banana Crisps
