I am overjoyed by the potential that the weather is cooling down. I can’t even tell you how ready I am for soup and hot chocolate days by the fireplace. I live for rain and blankets and cozy candlelight. It’s the time of weather that allows me to catch up on my movie watching, reading, and pouring cinnamon onto everything in the world.
Pumpkin Spice PopcornThe mornings are certainly getting cooler and pumpkin-spicing the world is becoming more and more appropriate. Pumpkin-spicing my popcorn was bound to happen… and it did. With brilliant results.

This popcorn, like many pumpkin spice recipes, does not contain actual pumpkin, but simply the spices of pumpkin pie. It’s a little sweet, a little salty, somewhere along the lines of kettle corn with an abundance of aromatic spices. It’s honestly pretty amazing how some sugar and spice and everything nice can turn your popcorn into an explosion of fall flavor. I’m probably going to have to go ahead and make this every day up through January. Talk about a perfect accompaniment to my cozy movie watching! Oh yeah, and bonus points for being low-fat and low-calorie! Pretty sweet 🙂

Pumpkin Spice PopcornPumpkin Spice Popcorn

  • 1/4 Cup Popcorn Kernels
  • 1/4 Cup Olive Oil
  • 3 tsp. White Sugar
  • 1/2 tsp. Sea Salt
  • 1/2 tsp. Ground Cinnamon
  • 1/4 tsp. Ground Cloves
  • 1/4 tsp. Ground Ginger
  • 1/4 tsp. Ground Nutmeg

In a cup or small bowl, mix together all spices, sugar, and salt. Set aside.

In a 10 inch saucepan over medium-high heat, heat oil with 1 kernel, covered. When the single kernel pops, add the rest of the popcorn and cover. Make sure your lid allows steam to escape or the popcorn will be soggy.

When popping slows, remove saucepan from heat and quickly transfer popcorn into a large bowl. Sprinkle with the sugar and spice  mix and stir to coat. Serve and enjoy!

Once completely cooled, popcorn can be stored in an airtight container.
