It’s been unexpectedly difficult for me to get creatively motivated and somehow the most difficult thing for me to do has been to write things down. I’ve spent a lot of evenings watching Christmas movies and even decorating my entire house for Christmas in an attempt to cheer myself up, even though I realize my attempt at a Christmas spirit is highly premature. I really appreciate everyone’s kind words about the loss of Jelly and your patience and understanding while I’ve been away.

This morning I woke up with an invigorated feeling. For the first time in a couple of weeks I have felt like actually doing something. I’m typically such a self-motivated, upbeat person with a mission to create as much as humanly possible within a given day, so my time away from that was just… blah. But I hope the worst is over, because I started thinking up a million new projects, ideas, scripts, stories, and recipes, and I can’t wait to get started on all of them!

The first recipe I’m bringing is a dessert that is super high in protein. Chocolate brownies made with whey protein powder, eggs, and pumpkin puree for a little added moisture. These are good brownies that are great if you’re on a restricted diet, especially of the high protein, low carb variety. If you’re not on a diet, you probably won’t appreciate them as much because there are definitely much more delicious brownies out there… Like my Salted Caramel Oreo Brownies. However, if you’re on a low-carb diet, these will help satisfy the missing sweetness in your life.

Studding these with dark chocolate chips also helps keep the carb count low and adds an extra punch of sweet. If you would like, and for extra protein, you can sub nonfat Greek Yogurt for the pumpkin. You can also use whatever protein powder you wish, however they may cook a bit differently than the one I chose, which is Dymatize Elite Chocolate Peanut Butter Protein.

  • 2 Cups Dymatize Elite Chocolate Peanut Butter Protein Powder
  • 2 Cups Pumpkin Puree
  • 2 Eggs
  • 1/4 Cup Egg Whites
  • 2 Tbsp. Olive Oil
  • 1/2 tsp. Sea Salt
  • 1 tsp. Vanilla Extract
  • 1 tsp. Cinnamon
  • 1/4 Cup Dark Chocolate Chips

Preheat oven to 350°.

Line an 8×8 brownie pan with parchment paper.

In a large bowl with a mixer, blend together first 8 ingredients in order. Stir in chocolate chips and pour batter into the lined brownie pan.

Bake for 30 minutes. Remove from oven and allow brownies to cool for at least 15 minutes before serving.
