Whew! It’s been a busy couple of months!  I’ve been working like a crazy person on my web series, Door to Door (if you haven’t watch it yet, please check it out! It’s been such a blast to make so far), I’ve been brought on board by Curious.com as a teacher doing how-to and instructional videos revolving around cooking, gardening, and crafting. The sudden onset of spring has had me trying to keep up with my yard… I had a visitor the other day that ate one of my favorite koi 🙁

…and I’ve actually been working furiously on new recipes to feature here, especially healthy ones. AND… I finally got to see the end result of a commercial I was in for Waypoint Cabinets that we shot allllll the way back in August!

So now that you’ve been brushed up on what I did with myself during my March absence, I’d like to share a lovely recipe with you!

Dark Chocolate Cherry Almond Smoothie

Black cherries are one of the most delicious fruits around. The way they pair with dark chocolate drives my tastebuds wild to the point that I swoon with each individual bite of the combination. I’ve always wanted to make a cherry smoothie because… Well, frankly, because I love black cherry ice cream and I wanted to figure out a way to make something equally delicious but at least a smidgen healthier.

Cherries are so sweet on their own without having to add any sugar, and of course Greek Yogurt adds an ample serving of protein. But to get a little creative, I decided to add something that I had never tried before.

I had found these at Earth Fare and felt the need to experiment with them, but I was having a hard time figuring out what to add them to. Then I thought, since cherries are already nice and sweet, I could add the cacao nibs for a chocolatey kick without needing to add any extra sweetener, and boy, was I right!

This smoothie is rich, tasty, and very filling. I would dare to give it credit as a dessert recipe because it really is that good. Cherries, of course, are already well known to be a great source of antioxidants, but did you know that research has actually linked them to reducing belly fat and speeding recovery time for post-workout soreness? Raw cacao is another superfood known for its antioxidant benefits, but did you realize that a 1oz. serving contains 36% of your recommended daily intake of fiber? And then there’s Greek Yogurt. With more than twice as much protein per ounce as regular yogurt, it’s also a wonderful source of calcium and probiotic bacteria, which is excellent for digestion. So here’s to a dessert that you can really dance about!

Dark Chocolate Cherry Almond Smoothie

  • 1/2 Cup Plain Greek Yogurt
  • 1/2 Cup Frozen Dark Sweet Cherries
  • 1/2 Cup 100% Pure Cherry Juice
  • 1/2 Cup Water (or more to desired consistency)
  • 1/2 tsp. Pure Almond Extract
  • 2 Tbps. Raw Cacao Nibs

In a blender, Magic Bullet, or food processor, blend together cherries, yogurt, juice, water, and almond extract until thoroughly blended. Add more water if necessary for consistency.

Add cacao nibs and blend again for about 30 seconds.

Pour into a glass and enjoy!

Tip: As an alternative to a smoothie, this can also be made with less water so that it’s a nice thick yogurt snack to be eaten with a spoon. You can even chill it in the freezer for 2 hours and enjoy it as a frozen treat!
