I’m not sure about you, but the holidays get pretty hectic for me. I never want to go to any Christmas parties empty-handed, but I don’t exactly have all the time in the world to spend cooking up the most complicated things in my appetizer arsenal. I also don’t want to bring the same old cheese and crackers. That’s why these Gingersnaps with Mango Chutney and Goat Cheese are so perfect. The sweet and spicy mango chutney is such an amazing flavor combination with the triple gingersnap thins, and the smooth, mellow, and slightly tangy aspects of the goat cheese creates the perfect balance while yielding spectacular results in a very impressive, yet extremely simple appetizer.

All 3 ingredients are readily available at Trader Joe’s. The Trader Joe’s Triple Ginger Cookie Thins make the perfect vehicle for these toppings as they are super crispy, super thin, super gingery, and they make an excellent cracker substitute. Trader Joe’s Silver Goat Chèvre is wonderfully smooth and relatively inexpensive, and the Trader Joe’s Mango Ginger Chutney is to die for.

Gingersnaps with Mango Chutney and Goat Cheese

(makes 40 servings)

  • 40 Trader Joe’s Triple Ginger Cookie Thins (about 1/2 package)
  • 1 Jar Trader Joe’s Mango Ginger Chutney
  • 1 120z. Package Trader Joe’s Silver Goat Chèvre

Immediately before serving, place a dollop of goat cheese on top of a gingersnap thin. Cover with a dollop of chutney. It’s too simple! However, do not assemble these far in advance as the gingersnap thins will not maintain their crispy texture after being refrigerated or topped with moisture containing foods for too long.

Alternatively, you can serve the goat cheese as a log, pour the chutney evenly over the top of the goat cheese, and lay the gingersnaps out nicely on the platter. Serve with a cheese knife for guests to help themselves.

Ingredients
