Cinnamon Nutmeg Snowball Cookies.
Or Russian Tea Cakes. Or Mexican Wedding Cookies. Or whatever else you might call them.
You guys, this is the 3rd year in a row that I have had this recipe sitting in my drafts and I almost forgot to post it before Christmas (like I did last year and the year before). I just can’t believe how quickly Christmas comes every year. I think I have all this time and then, SNAP, it’s gone.
As of today I have not gotten gifts for anyone yet. I am so ashamed. And even worse, I have no clue what to get for anyone. It’s kind of hard becoming an adult and being practical and not wanting anything yourself, so when you shop for other people you look out for tchotchkes and things that will add clutter… And when you’re shopping for your parents it’s difficult because they’ve already been acquiring a lifetime of odds and ends and for the most part they have every practical item in the book already.
Why does being an adult have to be so haaaaaarrrrddddd???
Insert cheesy transition to these Cinnamon Nutmeg Snowball Cookies. Because you know what’s not hard? These cookies!!! Dur! They’re so easy to make and easy to remember the ingredients, you should totally keep this recipe in the back of your mind in case you have to suddenly make a dessert in a pinch in an unfamiliar land without access to the internet or a cookbook. And these are totally perfect for people who want a dessert but don’t want it TOO sweet.
This is a traditional snowball cookie (or like I said before, a Mexican Wedding Cookie, or Russian Tea Cake, or whatever you’ve grown up calling them), with a tiny twist. Normally they don’t contain spices… But I can’t stop myself from wanting all things cinnamon and nutmeg for Christmas. Hence…
Cinnamon Nutmeg Snowball Cookies
Makes app. 30
Ingredients:
- 1 Cup Unsalted Butter
- 1/2 Cup Powdered Sugar (plus 1/2 cup for rolling in after baking)
- 2 1/4 Cup All Purpose Flour
- 1/4 tsp. Sea Salt
- 1 tsp. Vanilla Extract
- 1/2 tsp Cinnamon
- 1/4 tsp. Nutmeg
- 1 Cup Chopped Pecans
Directions:
Preheat oven to 350°
Cream together butter and 1/2 Cup Sugar. Add salt, vanilla, cinnamon, and nutmeg. Add flour and mix thoroughly. Add Pecans and mix through.
Roll into Tablespoon-sized balls and lay out on a cookie sheet about 2 inches apart.
Bake for 12-14 minutes until bottoms are slightly golden.
Remove from oven and roll in powdered sugar. Set aside.
When all cookies have cooled completely, roll once more in powdered sugar for that lovely snow-dusted look.
