I ate myself into a coma in December. I started the month by eating super healthy in order to lose a little weight for a Christmas party… and as soon as that party was over I spent the rest of the month putting the weight back on. It’s ridiculously hard to make the right choices when you’re surrounded by cookies.

I teach painting classes at Wine and Canvas, so to make it even more difficult, I taught a number of birthday parties and corporate Christmas parties and at every one of them there were cookies, cake, cupcakes, and candy… And at every one of them the host brought me said cookies, cake, cupcakes, and candy, and insisted that I eat them. I only gave in three times. I have superhero strength and willpower. Eh…

Anyway, it feels good to go back to healthy. It’s also nice that most people have some sort of New Year’s resolution to eat healthier and get in shape, so it’s almost like an understood rule to not try to tempt people with junk food, at least for the first half of January. And if people do offer you cake, they seem more understanding when you turn them down.

The recipe cards have great uses, and knowing that I was a pescetarian, I received only recipes that fit in to my diet. The recipe cards that came in the box were:

Herb Crusted Tilapia

Now on to the recipe! This Herb Crusted Tilapia recipe was one that I received in my December box. If you don’t have the Culinarie Box and therefore don’t have a couple of the specific ingredients, I have listed alternatives in the recipe so everyone can join in on the fun!

Herb Crusted Tilapia

Makes 4 Servings

Ingredients:

  • 4 Tilapia Filets
  • 2 Tbsp Bib’s Liquid Garlic Olive Oil (or garlic infused olive oil of your choice)
  • 1 Shallot, thinly sliced
  • 1 Lemon, thinly sliced
  • 1 Tbsp. French Seasoning Blend (or a dry blend of thyme, marjoram, rosemary, lavender, and savory)
  • 1 tsp. Sea Salt
  • 1 Tbsp. Fresh Parsley, Chopped

Directions:

Preheat oven to 425°

Line a baking sheet with parchment. Arrange the tilapia on the baking sheet.

Brush generously with oil and sprinkle evenly with salt and French Seasoning Blend.

Arrange the shallot and lemon slices atop the filets and bake for 8-12 minutes, or until lemons and shallots are wilted and the fish flakes easily with a fork.
