In a skillet or frying pan on high heat, toss asparagus with 1 Tbsp Olive Oil. Cook for 2-3 minutes, stirring occasionally. Add mushrooms and garlic, continue to cook for 2 more minutes.
Add the rest of your veggies and stir for a minute. Turn the heat down to medium and push all of the veggies to one side of the pan. Add a tsp of olive oil to the other side of the pan and crack 2 eggs on top
Cook for another 2-3 minutes and gently flip your eggs over, being careful to keep yolks intact.
Cook for 1 more minute and serve! Sprinkle with salt and pepper.
