Healthy oat cookies studded with cherries and cashews. Sweetened only with honey and fruit. No butter or oil.
Ingredients
3 Cups Rolled Oats
1 Cup Oat Bran
1 Cup Honey
2 Large Eggs
½ Cup Nonfat Greek Yogurt
1 Banana
½ Cup Blueberries
1 Lemon, juiced
2 Cups Raw Whole Cashews
½ Cup Dried Cherries
1 Cup Chocolate Covered Cherries
2 tsp Vanilla Extract
½ tsp Sea Salt
1 tsp Ground Cinnamon
Instructions
Preheat oven to 350ยบ.
In a blender, blend together blueberries, banana, and lemon juice.
Pour blended fruits and cinnamon into a small saucepan and place on the stove over low heat, stirring constantly until hot. Remove from heat and stir in oat bran completely.
In a food processor (I have a Magic Bullet), pour 1 cup of raw cashews and 1 tsp olive oil. Process until a cashew butter forms.
In the bowl of your electric mixer, mix together cashew butter, fruit-oatbran mixture, honey, vanilla, salt, Greek Yogurt. Add eggs, one at a time. Slowly add rolled oats, one-half cup at a time. Fold in dried cherries, chocolate cherries, and 1 cup of raw cashews.
In a baking sheet lightly brushed with olive oil, plop heaping tablespoons of the dough. These do not spread, so you should press them down a bit and shape them like a cookie. Place in the oven for 12 minutes.
