Super Healthy Cherry Cashew Breakfast Cookies

Healthy oat cookies studded with cherries and cashews. Sweetened only with honey and fruit. No butter or oil.
Ingredients
  • 3 Cups Rolled Oats
  • 1 Cup Oat Bran
  • 1 Cup Honey
  • 2 Large Eggs
  • ½ Cup Nonfat Greek Yogurt
  • 1 Banana
  • ½ Cup Blueberries
  • 1 Lemon, juiced
  • 2 Cups Raw Whole Cashews
  • ½ Cup Dried Cherries
  • 1 Cup Chocolate Covered Cherries
  • 2 tsp Vanilla Extract
  • ½ tsp Sea Salt
  • 1 tsp Ground Cinnamon
Instructions
  1. Preheat oven to 350ยบ.
  2. In a blender, blend together blueberries, banana, and lemon juice.
  3. Pour blended fruits and cinnamon into a small saucepan and place on the stove over low heat, stirring constantly until hot. Remove from heat and stir in oat bran completely.
  4. In a food processor (I have a Magic Bullet), pour 1 cup of raw cashews and 1 tsp olive oil. Process until a cashew butter forms.
  5. In the bowl of your electric mixer, mix together cashew butter, fruit-oatbran mixture, honey, vanilla, salt, Greek Yogurt. Add eggs, one at a time. Slowly add rolled oats, one-half cup at a time. Fold in dried cherries, chocolate cherries, and 1 cup of raw cashews.
  6. In a baking sheet lightly brushed with olive oil, plop heaping tablespoons of the dough. These do not spread, so you should press them down a bit and shape them like a cookie. Place in the oven for 12 minutes.
