Low-carb Smoked Salmon and Avocado Roll-ups

Healthy, low-carb smoked salmon and avocado roll-ups with goat cheese, dill, and cherry tomatoes. Serves 8 as hors d' oeuvres, serves one as a meal.
Ingredients
  • About 5 large Romaine Lettuce Leaves, ribs removed
  • 4-5 Strips of Nova Smoked Salmon
  • 5 Cherry Tomatoes, sliced
  • ¼ Cup Fresh Dill, thick stems removed
  • 2 Tbsp. Fresh Chopped Chives
Avocado Spread:
  • ½ Avocado
  • 1 Tbsp. Chevre Goat Cheese
  • ½ Lime Juiced
  • ¼ tsp. Sea Salt
  • Fresh Cracked Black Pepper to taste
Instructions
  1. For the Avocado Spread: In a small bowl (or glass, as I like to use), place lime juice, diced avocado, goat cheese, sea salt, and black pepper.
  2. Using a fork or a small whisk, smash the ingredients together until semi-creamy, but still chunky.
  3. Choose the biggest leaves of lettuce you can, cutting out the rib, and lay them on top of Saran wrap allowing them to overlap each other by 2 inches horizontally.
  4. Spread the avocado spread thickly down the leaves, perpendicular to how they are laying. Keep the ingredients a little left of center so they can be properly rolled up.
  5. Lay out the remaining ingredients on top of the avocado spread.
  6. Starting from the left side and using the Saran wrap to help you, gently begin rolling up the lettuce wrap much like you would a sushi roll.
  7. Once rolled, use toothpicks to secure the roll in place and make your cuts between the toothpicks.
