Refreshing summer salad with heirloom tomatoes, watermelon, shrimp, and feta cheese.
Ingredients
Fresh Seedless Watermelon
2-3 Varieties of Heirloom Tomato
Purple Onion
12 Shrimp
2 Tbsp. Feta Cheese
2 Tbsp. Fresh Cilantro
Fresh Ground Black Pepper for Garnish
Lime Juice for Garnish or Cilantro Lime Vinaigrette
Instructions
This one's more just about arranging ingredients, but here's how I did it:
Cut a few slices of watermelon into triangles and remove the rind.
Slice your tomatoes
Cut a few slice of purple onion and then cut in half
Grill or cook shrimp in a skillet. Cold pre-cooked shrimp also works.
Arrange the salad in order for presentation. Example: Watermelon, yellow tomato, purple onions, red tomato, watermelon, etc. Sprinkle with feta cheese and cilantro. Spread shrimp out evenly on plate.
Garnish with fresh ground black pepper and lime juice or dressing. Serve cold.
