Caramel Oreo Brownies

Amazing fudgy brownies made with coconut cream instead of butter, wrapped around whole oreos and topped with salted caramel drizzle.
Ingredients
  • 1 Cup Coconut Cream
  • 1 Cup Brown Sugar
  • 1 Cup White Sugar
  • 2 Eggs
  • 1 tsp. Vanilla
  • ½ Cup Unsweetened Cocoa
  • ½ tsp. Baking Powder
  • ½ tsp. Sea Salt
  • ¼ tsp. Cinnamon
  • 2 Cups Flour
  • 1 Cup Dark Chocolate Chips
  • 1 Package Oreos or Joe Joes
  • ¼ Cup Fleur d' Sel Caramel Sauce
Instructions
  1. Preheat oven to 350°.
  2. In a large bowl with a mixer, mix together Coconut Cream and both sugars until creamy. Add eggs one at a time and vanilla. Add cocoa.
  3. In a separate bowl, mix together flour, baking powder, salt, and cinnamon. Slowly add dry mixture to wet mixture until thoroughly mixed.
  4. Add chocolate chips.
  5. In a 9x13 glass baking dish, spread half of the brownie mixture evenly. Place Oreos (in the photos shown, I used Trader Joe's brand, Joe-Joes) evenly in rows across the top of the brownie mixture (mine was 4x5 Joe-Joes, so 20 total.) Press them gently into the brownie layer.
  6. Evenly spread the rest of the brownie mixture across the top of the Oreos with a spatula. Finally, drizzle caramel sauce over the top of the brownies.
  7. Place in the preheated oven for 25 minutes.
  8. Remove from oven and allow to cool completely before serving.
