Gooey Peanut Butter Cookie Brownies

A delicious layer of peanut butter cookie topped with a crispy brownie and fluffy marshmallow. You can never eat just one!
Ingredients
Peanut Butter Cookie Layer:
  • ½ Cup (1 Stick) Unsalted Butter, Softened
  • 1 Cup Brown Sugar
  • 1 Cup White Sugar
  • 1 Cup Creamy Peanut Butter
  • 2 Large Eggs
  • 1½ Cups All-purpose Flour
  • ½ tsp. Baking Soda
Brownie Layer:
  • ⅓ Cup Unsweetened Cocoa Powder
  • ½ Cup (1 stick) Unsalted Butter, Melted
  • 1 Cup Sugar
  • 2 Large Eggs
  • 1 tsp Vanilla Extract
  • ½ Cup All-purpose Flour
  • ¼ tsp. Baking Powder
  • ¼ tsp. Sea Salt
  • 2 Cups Rice Krispies
Instructions
Peanut Butter Cookie Layer
  1. Preheat oven to 350°
  2. In a medium bowl, cream together butter and sugar. Mix in Peanut Butter and Eggs.
  3. In a separate bowl, mix flour and baking soda and then mix into the peanut butter mixture.
  4. Spread dough onto the bottom of a 9×13 ungreased glass baking dish.
  5. Spread the contents of 2 jars of Marshmallow Fluff on top of the Peanut Butter Cookie layer. What I do is plop the fluff on top in spots and then I place the dish in the oven for 1 minute to soften the fluff, then spread it out evenly with a spatula.
Brownie Layer
  1. In a medium bowl, blend together butter, sugar, cocoa powder, eggs, and vanilla.
  2. In a separate bowl, mix flour, baking powder, and salt.
  3. Slowly pour into the chocolate mixture and blend well.
  4. Gently fold in Rice Krispies.
  5. Spread brownie mixture on top of the marshmallow layer.
  6. Place in the pre-heated oven for 45 minutes.
  7. Remove from oven and allow to cool completely. Chill in the refrigerator for easier cutting.
