Gingersnaps with Mango Chutney and Goat Cheese

These Gingersnaps with Mango Chutney and Goat Cheese are the perfect simple appetizers for all of your holiday parties. They're absolutely bursting with flavor, and take only minutes to prepare.
Ingredients
  • 40 Trader Joe's Triple Ginger Cookie Thins (about ½ package)
  • 1 Jar Trader Joe's Mango Ginger Chutney
  • 1 120z. Package Trader Joe's Silver Goat Chèvre
Instructions
  1. Immediately before serving, place a dollop of goat cheese on top of a gingersnap thin. Cover with a dollop of chutney. It's too simple! However, do not assemble these far in advance as the gingersnap thins will not maintain their crispy texture after being refrigerated or topped with moisture containing foods for too long.
  2. Alternatively, you can serve the goat cheese as a log, pour the chutney evenly over the top of the goat cheese, and lay the gingersnaps out nicely on the platter. Serve with a cheese knife for guests to help themselves.
