Peppermint Hot Chocolate Popcorn

This easy Peppermint Hot Chocolate recipe is delightfully festive and makes a perfect appetizer for a party or gift to give your friends!
Ingredients

  • ¼ Cup Popcorn Kernels
  • ¼ Cup Olive Oil
  • 2 Tbsp. White Sugar
  • ¼ tsp. Sea Salt
  • 2 Cups Chocolate Chips or ½ Bar Trader Joe's Pound Plus Milk Chocolate Bar
  • ⅛ Cup Andes Peppermint Baking Bits
  • ½ Cup Mini Marshmallows (I use Mini Dandies because they're vegan)
Instructions
  1. In a 10 inch saucepan over medium/high heat, heat up olive oil and 1 popcorn kernel. When the kernel pops, add the rest of the kernels. It will start popping rapidly.
  2. When popping slows, remove from heat and transfer into a large bowl. Sprinkle with sugar and salt, mixing through.
  3. Pour popcorn out onto a baking sheet lined with parchment paper or a silpat baking mat. Spread evenly into a single layer.
  4. In a double boiler, melt chocolate. You can add up to 1 Tbsp. olive oil to make it slightly runnier (don't go crazy), which makes it easier to pour.
  5. When chocolate is melted, use your whisk or spoon to drizzle chocolate all over the popcorn layer. Sprinkle peppermint bits on top. Sprinkle marshmallows on top of that.
  6. Allow chocolate to harden at room temperature, and then transport the mix into a bowl or container for storage. Give it as a gift or eat it all yourself!
