Delicious all-butter cookies full of chocolate and peppermint baking bits. The tastiest peppermint hot chocolate you'll find in a cookie!
Ingredients
Peppermint Hot Chocolate Cookies
½ Cup Unsalted Butter, softened
1 Cup Brown Sugar
½ Cup White Sugar
1 tsp. Vanilla
2 Eggs
2 Cups Flour
⅓ Cup Unsweetened Cocoa Powder
1 tsp. Baking Soda
½ tsp. Sea Salt
1 Cup Mini Marshmallows (or Vegan Dandies cut in quarters)
1 Cup Andes Peppermint Crunch baking bits
Instructions
Preheat oven to 350°
Mix together butter and sugar until creamy. Add vanilla, eggs, and cocoa powder.
In a separate bowl, sift together flour, baking soda, and salt. Slowly add to the wet ingredients, mixing well. Stir in the marshmallows and peppermint bits until evenly distributed.
On a baking sheet lined with parchment paper, drop dough by the tablespoon about 3 inches apart. Place in the oven for 8-10 minutes.
