Banana Almond Crunch Greek Yogurt

This… wow… This. This is pretty much my favorite breakfast recipe ever, and it’s so simple I’m not even positive that I should be able to count it as a recipe. But I’m going to. Why? Well, because I believe you should give it a try so you can find out just how amazing this breakfast dish truly is.

I personally like to eat this Banana Almond Crunch Greek Yogurt for breakfast on days when I’m particularly active because it packs a whopping of energy in it. If you eat it exactly as I’ve laid out with the same brands of yogurt and almond butter that I use, you’re looking at 1 serving supplying you with 26 grams of protein, 270 calories, 8 grams of fat (5 of those being Monounsaturated fat and 2 being Polyunsaturated fat), and 25 grams of carbs (all complex) and 26% of your daily calcium recommendation. Now, that’s a very well rounded morning breakfast!

I used to make this dish with peanut butter, but I went to Publix and decided I was going to give this MaraNatha “no stir” all natural Crunchy Almond Butter a try (everyone raves about the health benefits of almond butter, but I’d never really been a huge fan of the stuff)… Well, this brand definitely changed my mind about almond butter. It’s thicker than what I’ve had in the past and it has these really nice chunks of almonds in it that add the most wonderful texture to my yogurt concoction. This particular brand does use Organic Unrefined Cane Sugar in their butter, but in a 2 Tbsp. serving there are only 3 grams of sugar, so they really haven’t added very much (at least in my opinion, not enough to warrant giving up the crazy delicious taste of this brand for sugar concerns). If you happen to be unable to find this brand, you can always sub with another brand of crunchy almond butter (make sure to check the ingredients and stay away from hydrogenated oils and refined sugars), get creamy almond butter and add your own chunks of almond to the mix, or even make your own almond butter from scratch!

You can of course make your own substitutions and portion sizes… Half the yogurt, twice the banana, etc., and if you’re feeling really bold, add a sprinkling of cinnamon to the mix! (Cinnamon is so bold… you’ll practically be a daredevil for even thinking about it… ) Give this creation a try and don’t be afraid to fall in love with this simple yet incredible breakfast creation!

Ingredients:

  • 1 Cup 0% Plain Greek Yogurt (I use Fage brand)
  • 1 Tbsp. Crunchy Almond Butter (I use MaraNatha brand)
  • 1/2 Medium Banana, Sliced

Scoop Greek Yogurt into a bowl and top with banana slices and almond butter. You can stir them all together or, do like I do and push the bananas and almond butter to the side so you can choose how much you get with each bite of yogurt. Enjoy the wonderful crunch!
